2 cups semipearled farro
2 tablespoons extra virgin olive oil
2 tablespoons honey
¾ cup pepitas (green pumpkin seeds)
½ cup sliced almonds
½ cup shredded coconut
½ cup golden raisins
½ cup dried cranberries
½ cup dried apricots, quartered
1 Preheat the oven to 300°F.
2 Place a medium saucepan of water over high heat and bring to a boil (BTB). Season the water with salt and the sugar. Add the farro and let the water return to a boil. Cook for 5 to 6 minutes or until the farro is tender on the outside but still chewy on the inside. Drain the farro in a mesh strainer and spread it out on a baking sheet to cool.
3 When the farro is cool, put it in a large bowl and stir in the oil and honey. Mix to coat the farro thoroughly. Toss in the pepitas, almonds, and coconut and combine well.
4 Spread the farro mixture on a baking sheet and place in the oven for 15 minutes. Remove from the oven, stir, and bake for another 20 minutes or until golden. Remove from the oven, stir again, and let cool completely.
5 Once cooled, stir the granola and let it sit out on the baking sheet for at least 1 more hour, until completely dry. Add the raisins, cranberries, and apricots.
6 Eat immediately or store in an airtight container.
ANNE-NOTATION The garnishes I suggest are optional, but totally delicious: Homemade Ricotta, diced apples or pears, more honey. And of course milk—whole milk, skim milk, soy milk, whatever you want!
